Apple-Pear-Blueberry Crisp Recipe

(Makes 6 large servings)

This dish is magic- it disappears within minutes!

Ingredients

 Filling:

  • 3/4 pound Granny Smith Apples * (thin-sliced)
  • 3/4 pound of pears *
  • 8oz fresh or frozen blueberries
  • 1 tablespoon lemon juice
  • Pinch of sea salt
  • 1/4 teaspoon cinnamon
  • pinch of cardamom
  • 1/2 cup of grape juice or apple juice
  • 1 tablespoon arrowroot or cornstarch+

 

*leave the skin on organic apples and pears

+ mix arrowroot or cornstarch with grape juice or apple juice

 

Crisp:

  • 2 cups rolled oats
  • 1/2 cup whole grain flower (wheat, spelt or brown rice)
  • 1/4 cup oil- cold-pressed, no taste (canola, sunflower, safflower or grapeseed)

 

Directions:

  1. Rinse apples and pears, peeling is optional
  2. Cut apples and pears into quarters, remove seeds
  3. Slice apples and pears into quarters, remove seeds
  4. Place apples, pears and blueberries in baking dish
  5. Sprinkle with lemon juice, sea salt, cinnamon and cardamom
  6. Pour juice over fruit, then toss to mix
  7. Mix crisp ingredients and crumble over fruit evenly
  8. Press down gently
  9. Bake at 350°F for 30-45 minutes, until crust is crunchy and golden, and apples are soft.
